COLD BREW TIRAMISU
Ingredients (Makes 4 servings):
- 2 eggs
- 125g sugar
- 45g mascarpone cheese
- 300 ml fresh cream
- 1 lemon
- Seeds of ½ vanilla pod
- 150 ml Simple Brew Coffee Concentrate
- 80-100 ml coffee liqueur (we prefer using Kahlua)
- 12-15 ladyfinger biscuits (we prefer using Savoiardi)
- Dark chocolate/Cocoa powder for garnish
Preparation:
- Separate egg yolks and egg whites in two large whisking bowls.
- In the bowl with the egg yolks, add half the sugar and whisk until combined.
- Add mascarpone cheese and whisk again.
- Add fresh cream and vanilla seeds and whisky again slowly.
- In the bowl with the egg whites, add 2-3 drops of lemon juice and whisk vigorously until mixture has a foamy consistency and turns milky white.
- Layer egg white mixture on top of the egg yolk mixture and slowly fold until combines. Don’t whisk.
- In a new bowl, spread a thin layer of egg and mascarpone cheese mixture, enough to coat the base.
- In a separate flat bowl, pour cold TSB Coffee Concentrate, half the remaining sugar and 80-100 ml of coffee liqueur (optional). Adjust amount of coffee liqueur as per your preference.
- Dip the lady finger one by one till completely soaked in the coffee liqueur mix and carefully layer on top of the egg and mascarpone cheese mix until fully covered.
- Add another layer of the egg and mascarpone cheese mix and repeat. Make more coffee liqueur mix in case you run short.
- Finish with a layer of the egg and mascarpone cheese mix on top
- Once done, shave some dark chocolate or sprinkle cocoa powder on top
- Refrigerate for at least 4 hours or overnight
